Well we know there is a double episode next season in LOK that deals with the origins of the Avatar, so I guess that kinda ticks that box. Plus we know about the previous Fire and Earth Avatar’s, so actually that wouldn’t be terribly interesting.
EDIT: Kyoshi would be interesting actually. But you wouldn’t make a whole series about it.
